1 lb Prince® Rigatoni
2 Tbsps butter, melted
1 cup mayonnaise
1 Tbsp lemon zest
1/4 cup lemon juice
1/4 cup parsley, finely chopped
2 Tbsps fresh chives, finely chopped
garlic cloves, minced
2 tsps Old Bay Seasoning
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp ground red pepper (cayenne)
(about 1 ½ lb. each) lobsters, steamed
2 cups baby arugula
  lemon wedge

Cooking Directions:

  1. Cook pasta according to package directions; drain and reserve 1/4 cup cooking liquid. Toss cooked pasta with butter and reserved cooking liquid. Let stand for about 20 minutes or until completely cooled.


  2. In large bowl, stir together mayonnaise, lemon zest, lemon juice, parsley, chives, garlic, Old Bay seasoning, salt, pepper and cayenne; toss with pasta, lobster and arugula until well coated. Serve with lemon wedges.


• Cooked shrimp can be substituted for lobster.

• Add 1 cup each chopped tomatoes and cucumber if desired.
